Cachaça

The national drink in Brazil, cachaça is the best selling spirit domestically, but is struggling on the exports market. Made from sugar cane, it is a close relative to rum

Raw materials: cane juice
Type of distillation: mostly in column stills, to around 45% ABV
Ageing: the casks for aged cachaças are from American oak or Brazilian wood varieties
